Rhubarb Cake, Joyce J.
2 cups flour
3 teaspoon baking powder
1 teaspoon salt
1/3 cup sugar
2 tablespoon butter
1 egg
3/4 cup milk
4 cups cut-up rhubarb ( 1/4 - 1/2" cut)
1 3oz. package Jello (strawberry or raspberry)
Topping:
1-1/4 cups sugar
6 Tablespoon flour
6 Tablespoon butter

Cut butter into the first four ingredients. Beat egg and milk together and stir into the flour.

Spread into greased 9 x 13 dish. Arrange rhubarb on top and sprinkle with Jello.

Prepare topping by cutting butter into sugar & flour. Spread on top and bake at 375 degrees.
for 45 minutes. Enjoy!
